Gateau au Chocolate

French Chocolate Cake or Gateau au Chocolat is a delicate yet rich tasting cake.  With each bite of this gateau the aroma and taste tell you (loudly):  This is the real thing baby!  You must adore chocolate to like this cake. It is not for the weak at heart!

This dessert is surprisingly easy to make and can be eaten as it comes out from the oven, or served with an English cream (Crème Anglaise).  For a special touch present a slice with fresh raspberries or strawberries on the side.

A big thanks to mon amie Claire for this recipe. Despite being a busy mom with five young kids, she whips up this cake for many occasions including the afternoon goûter (snack).  Who has time to make homemade cakes?  (Believe it or not you do). Claire says it takes just a minute to do and short time to bake. It is true, I now make this cake on occasion too.

A minute to make, but savor each bite for much longer.

An authentic French chocolate cake recipe

French Gateau Au Chocolat

Serves 6
Prep time 20 minutes
Cook time 20 minutes
Total time 40 minutes

  • 7 oz Dark Dessert Chocolate
  • 4oz Butter
  • 7oz Confectionery Sugar
  • 5 Eggs
  • 1 tablespoon Flour


You can heat up the chocolate-butter mix without a bain-marie, but you must stay next to the pan, stirring and watching that it does not burn.


Step 1
Preheat oven to 375 degrees Fahrenheit. Grease a 9 inch cake pan.

Step 2
Crack chocolate into small pieces into a pan. Add the butter to the chocolate.

Step 3
Using a bain-marie, heat chocolate and butter together on stove, mixing well.

Step 4
Continue to mix until chocolate-butter mixture is completely melted together.

Step 5
Add the powdered sugar to the melted chocolate-butter mix. Continue to heat and mix well.

Step 6
Add eggs (both white and yolk), one by one, to batter.

Step 7
Add flour and continue mixing!
Step 8
Take batter off heat, pour into pregreased cake pan and put in oven for approximately 20 minutes.
