Mascarpone and Lime Topped Watermelon

A meal on a hot summer day should be light. This dessert fits the bill with its pretty look and varied textured taste. A cold watermelon dessert to enjoy with young and old alike.


  • 1 Whole Watermelon (Preferably seedless)
  • 8oz Mascarpone Cheese
  • 1 Juice of Lime
  • 1 bunch Fresh Mint
  • 1/2 teaspoon Vanilla
  • 1/8 cup Granulated sugar


This dessert tastes best in hot weather. The watermelon should be cold before adding the topping and served quickly. Don't hesitate to decrease the sugar in the cream but it needs some sweet flavor. You could add honey as a substitute for granulated sugar.


Step 1
Mix all ingredients except watermelon and mint with a fork or whisk in a bowl until creamy.
Step 2
Cut watermelon into large decorative squares removing the peel from each square.
Step 3
Wash the mint and remove the leaves from the stem.
Step 4
Lay out individual plates for number of servings and top each plate with a piece of watermelon.
Step 5
Add a small dollop of mascarpone cream on top of each piece of watermelon.
Step 6
Put a mint leaf on top of mascarpone cream and serve.
