A Vegan Lentil Patty {Recipe Redux}Recipe With a French Le Puy Lentil Touch

Here we are almost a week past St. Paddy’s Day, but with my fellow Recipe Reduxers we are still celebrating (with food of course!).

This month’s Recipe Redux theme is healthy and tasty Paddy patty recipes. I love this idea! Patties are versatile because (depending on the recipe) they are enjoyed hot or cold, added to a picnic, brought in a lunch box and are child-friendly.

For this patty, I wanted to add a French touch of using a brand of French lentils called Le Puy. These are the best lentils I have ever tasted, they cook faster than other lentils and have a “unique peppery flavor and they hold their shape during cooking.”
Here is a brand that you can buy on Amazon if you cannot find Le Puy lentils in your grocery store.

For this reason, Le Puy lentils are a good brand to use to make patties, but if you cannot find these lentils where you live, use another type that you like.

Why Lentils are A Perfect Addition to a Vegan or Vegetarian’s Diet

Lentils are a nutrient dense food, high in essential nutrients that a vegan and vegetarian need, low in cost and environmentally friendly. Lentils are on my list of power-foods and I recommend these glorious legumes as part of everyone’s eating plan.

Here are more lentil health benefits:

  • Lentils contain high levels of soluble and insoluble fiber which help with lowering cholesterol and aids in digestion
  • Lentils are a good source of non-heme iron, something difficult to get in a meat-free diet
  • Lentils contain high levels of protein, which is important in a vegetarian/vegan diet
  • Lentils have good levels of essential vitamins and minerals, such as folate and magnesium

These Sophisticated Lentil Patties are Delicate Because of Its Simple Ingredients

A few notes on these lentil patties. They are delicate because they don’t contain bread or egg to hold them together (so when you cook them on the stove for the last part of the recipe, you need to take care when turning them over in the pan). They are easy to make (my big criteria with recipes)! And in this recipe, they are topped with a coconut cream sauce which I think is essential to the taste of this dish. Plus, the French always add some type of sauce or topping to most dishes, and this really adds to the taste.

If you didn’t want to add the coconut lime cream, you could top these patties with a tomato or fruit salsa or a vinaigrette.

And as far as making this recipe for your family, I give it a go-ahead. Last night I cooked this patties and offered them to my four kids to taste. My oldest, who is fourteen, loved these. My son, thirteen, said they were okay. For my two youngest, (I didn’t tell them that they patties were made from lentils before trying them because my kids hear ‘lentils’ and it reminds them of the lentils served in the school lunch meal, which they don’t like) my nine-year old said, “Oh, I like them!” and my youngest said “Mom, moyenne (so-so)”. Well, I have learned with my four kids, you cannot please all of them.

Vegan Lentil Patty Topped With Coconut Lime Cream

A child-friendly and easy recipe for vegan healthy lentil patties using Le Puy French lentils and coconut cream.

Ingredients

  • 1 cup Le Puy French dried lentils (or another lentil brand)
  • 3/4 cups coconut cream (From the top of coconut milk (see note))
  • 1/2 juice lime
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried ginger spice
  • pinch cayenne pepper
  • 1/4 teaspoon cinnamon spice
  • 1/2 shallot, minced
  • 2 tablespoons olive oil
  • dash fresh cilantro leaves
  • freshly ground pepper (to taste)

Note

Coconut Cream: This is the top part of a can of coconut milk that is not liquid and contains little or no water. On the coconut milk that I buy, almost the whole top part of the can is this thick coconut cream. This is the part you need to use in the recipe. Do not shake up the can to homogenize the milk before cooking. Also, these patties are delicate. Take care during the final cooking process when turning over the patties.

Directions

Step 1
In a cooking pot, heat up a large quantity of water until boiling.
Step 2
Wash the lentils well and when the water is boiling, add the lentils to the pot.
Step 3
Midway through cooking (about 10 minutes) add a 1/2 teaspoon of salt to the lentils.
Step 4
Allow the lentils to finish cooking, around 20-25 minutes. Note: Le Puy lentils cook faster than other lentil brands.
Step 5
When lentils are cooked, drain the water and return the lentils to the pot. Using a hand-held mixer, blend the lentils to a puree, and allow them to cool slightly. (You can also blend the cooked lentils in a food processor or blender).
Step 6
Place pureed lentils in a separate mixing bowl and add 1/4 cup of coconut cream, minced shallots, ginger, cinnamon and freshly ground pepper.
Step 7
Mix the lentils and other ingredients well and form into about 6-7 patties.
Step 8
Prepare the coconut lime sauce: Mix a 1/2 cup of coconut cream to the juice of half a lime. Set coconut cream sauce aside. Wash cilantro leaves to add as a final garnish to lentil patties.
Step 9
Heat olive oil in a saute pan on the stove, and when oil is hot (but not smoking), add the patties to cook.
Step 10
Cook patties for approximately five minutes on each side. Remove from pan, add coconut lime cream, top with a few cilantro leaves and serve immediately.

    • Hi Rachel! Super easy lentil patties. Next time I am going to try to makes them ball shaped for my young kids so they can enjoy them with spaghetti and tomato sauce. I was surprised how easy lentils are to make and use as a substitute for meat.
